Celiac Disease and mode without gluten
The mode without gluten is binding to the people reached of a Celiac disease. By excluding in a permanent way corn, the barley and the rye of the food, this type of mode is particularly constraining, as well in the adults as in the children.
Celiac disease or intolerance with the gluten
The Celiac disease is an affection which seems increasingly frequent. It touches approximately a person on 100 in Europe and is 2 to 3 times more frequent among women. It is often revealed in childhood, generally between 6 months and 2 years after the introduction of the gluten during food diversification, but also often at the adulthood between 20 and 40 years.
Total and permanent exclusion of the gluten
It is characterized by a food intolerance with certain components of the gluten. The gluten corresponds to the remaining elastic proteinic mass after extraction of the corn starch. The treatment of the Celiac disease thus rests on the total and permanent exclusion of the gluten, that is to say corn (and cereals close like the German wheat), of the barley and rye. On the other hand, the oats are not any more to exclude, its harmlessness having been shown.
The objective of this mode, to prevent the complications: cancer risk with the lymphoma and of osseous demineralization.
Indeed, this disease prevents the absorption of the nutrients, the vitamins and minerals, like calcium, by the intestine. Thus the people reached risk a malnutrition in spite of a good food. They suffer in particular from digestive disorders of the diarrheas type, but also present a great tiredness, with a risk of depression and joint pains.
In the child, in addition to the diarrheas and tiredness, one notices a sadness and a delay of growth. This is why in an young child, a break of the curve of growth must bring to check the assumption of a Celiac disease.
The mode without gluten is very constraining
The mode of exclusion of the gluten is very constraining because one finds this ingredient in the current majority of the consumables (bread, paste, cookies…) and of many industrial preparations. It is advisable to read all the labels attentively. There exists however more and more of dietetic products without gluten. They are refunded partly, with an annual ceiling, by the Social security, provided that the doctor writes an ordinance. It should be noted that the Celiac disease does not form part of the long-term illness (ALD).
The social life of the people having to respect a mode without gluten being very difficult, Pr Christophe Dupont*, tends to advising a light flexibility in the children. If it is essential that young people disappear the diarrheas follow the mode scrupulously in order to make and to observe the resumption of the curve of growth, some controlled variations (ex: a piece of cake with one to taste birthday) can be allowed, provided that the child does not support of them negative consequences.
